Silver(Coho) Salmon

The Coho Salmon size, relatively high fat content and excellent color retention make it a desirable fish. This is a Pacific Salmon which is used highly in west coast sushi restaurants.

The oil content makes it ideal for grilling. Baste with marinade, cover and cook until salmon is opaque through and flakes readily. Or Sashimi style.
