Suffolk

Suffolk sheep quickly became America’s most common breed of sheep. In general, rack of lamb is exquisite whilst roasted braised, or grilled. Leg of lamb may be marinated and roasted, and lamb shoulder respond well to braising and roasting. And in case you are too timid to start with a lamb rack, attempt lamb sausage – a favorite in North African and French cuisine.
